Bell peppers are a variety of Capsicum annuum that come in almost every shade of the rainbow, including red, yellow, orange, green, chocolate/brown, vanilla/white, and purple. They are not a spicy pepper, but range from being bitter to sweet and fruity.
RED BELL PEPPERS
Red bell peppers are a smooth-skinned variety with uniformly colored skin and a partial stem attached. Displaying three to four thick-walled lobes, the pepper has internal ribbing and seeds, which are discarded before use. Similar in flavor to a Yellow or Orange bell pepper, the Red bell has a mild, sweet pepper flavor with a crisp-firm texture.

GREEN BELL PEPPERS
Green bell peppers are medium to large in size and dark green skin is smooth, glossy, and firm, and the flesh is pale green juicy, crisp, and succulent. Green bell peppers are crunchy with an aromatic, green, less sweet and almost bitter flavor than the other colored varieties.

ORANGE BELL PEPPERS
Orange bell peppers are medium to large in size. The smooth skin is firm, glossy, and pale green when young transforming to bright orange when mature. Underneath the skin, the pale orange flesh is thick, juicy, crisp, and succulent, with a hollow cavity that contains very small, flat cream-colored seeds and a thin membrane. Orange Holland bell peppers are crunchy with a sweet taste.

YELLOW BELL PEPPERS
Yellow bell peppers are medium to large in size. The smooth skin is firm, glossy, and pale green when young transforming to bright yellow when mature. Underneath the skin, the vibrant yellow flesh is thick, crisp, and succulent, with a hollow cavity that contains very small, flat cream-colored seeds and a thin membrane. Yellow Holland bell peppers are crunchy and juicy with a mild, sweet flavor.
